The other day, I went out to the garden and my basil was out of control! I was so excited, but it was time to trim it back. I had so much that I searched and searched Pinterest for a quick idea of something fun, fresh and different I could do with all of this basil and this recipe from Cafe Sucre Farine sounded just perfect. I had to make some changes based on what I had in the house, so this was my concoction:
- 2 cups (about ¼ pound) tightly packed fresh basil leaves, tightly packed
- ⅓ cup white balsamic vinegar
- 1 tablespoon sugar
- 2 tablespoons agave syrup
- 2 cloves garlic
- 2 teaspoons Dijon mustard
- ¾ cup olive oil
Put the first 6 ingredients in the blender to pulverize and combine. Once bright green and smooth, slowly add olive oil to create and emulsion.
I could not resist and made myself a fresh picked tomato with salt, pepper and drizzled with this dressing for lunch. It was so delicious, that evening we served a healthy dinner of tortellini with fresh chopped tomato, onion and this amazing sweet basil vinaigrette. It was a hit with the hubs!
I was visiting a new friend at her home the same day and brought some as a hostess gift to our play date. That evening I received a thank you note via email asking for the recipe, it was so delicious. I can’t wait to make it again!
